Beside the shimmer of The Dubai Mall's famous waterfall sits a restaurant called ANA, and it opens with a question rather than a welcome mat.  Who Am I ? For anyone raised in a culture where hospitality runs in the blood rather than the job description, the answer it offers will feel oddly, movingly close to home.

ANA is Arabic for "I am." The name mirrors something the UAE itself has been working out for decades  a country built at the crossing of trade routes and tides, taking in the world without losing its shape. ANA puts that same negotiation on a plate: heritage on one side, invention on the other, and a kitchen confident enough to let both sit at the same table.

The idea starts with the majlis  the Emirati sitting room where guests have always been received without hurry, without a clock running. Any South Asian will recognise the shape of it immediately: the second helping you didn't ask for, the chai that arrives before the request. ANA has built an entire restaurant on that instinct, in a room where arcs of light fan out overhead like a horizon caught mid-glow, set against deep indigo walls and warm terracotta  glamorous, but never cold about it.

The kitchen's real strength shows on the plate. Emirati dishes here are reworked, not preserved as museum pieces  the same instinct the best Pakistani kitchens have always applied to biryani, nihari, karahi. Some recipes are sacred. That has never stopped anyone improving on them.

Breakfast opens with Balaleet, saffron-sweet vermicelli folded through egg. Soup runs from a mushroom and dill chicken thick with orzo to a lemony lentil broth. The salads reveal how far ANA's instincts travel: alongside a quinoa tabbouleh sits a Dill Kashmiri  potato, green moong sprouts, fried bread, chickpeas, sweet yogurt, mint chutney, tamarind  essentially a chaat wearing better lighting, which any Pakistani reader will clock instantly.

The mezza turn playful: hummus finished with shawarma, a short rib hummus that borders on excessive in the best way, and crispy calamari in a chili yuzu mayo that leans distinctly eastward.

The mains earn the concept's keep. A slow-cooked Mubahar lamb with saffron rice sits above a butter chicken pasta finished in makhani cream  a dish that lands instantly with any Pakistani table, filtered through an Emirati kitchen. Machbous Hessa and a fragrant lamb or prawn biryani carry the tradition; a chicken tandoori pasta and a chili smash burger carry the rest. None of it reads as compromise. It reads as a kitchen cooking what it likes.

The charcoal grill brings the showier dishes  a citrus-sesame steak, a lummi tikka of beef tenderloin with smoked labneh, and a char-grilled seabass lifted with green sauce. Dessert closes strong: an Ana French Toast Kunafa soaked in rose water syrup, a pistachio-and-coconut Oum Ali, and a Lotus Tiramisu with no business being this good. To drink, mint ayran for anyone who wants something familiar, and an Ana Vimto Brew that pairs the nostalgic purple syrup with espresso  odd on paper, convincing in the glass.

Identity as the whole premise of a restaurant lands differently for a Pakistani reader. It's a negotiation we know well  between what our grandmothers cooked and what we now crave. ANA doesn't resolve that tension. It puts it on the table, course by course, and lets you sit with it a while.

Go for the food  that alone justifies the trip  but stay for the rarer thing: a restaurant that has actually worked out who it is, and lets you think about your own answer over a very good meal.
